In line with the world heritage site&#8217;s mission to lead the way toward a more sustainable future, the kitchen primarily works with ingredients that have a lower climate impact, such as fish, poultry, and plant-based alternatives. <\/p>\n<p>\u2018In-between\u2019 is not a compromise but a conscious strategy. Today, it mainly features vegetarian dishes but also serves as a flexible zone for thoughtful choices, such as local game meat with a low climate impact. The important thing isn&#8217;t following absolute rules, but that every ingredient is a conscious and responsible choice.  <\/p>\n<p>Red meat has therefore not been part of the regular menu so far. This isn&#8217;t for dogmatic reasons, but to reduce the carbon footprint while showing that sustainable gastronomy can be both generous and flavorful. <\/p>\n<p>Matsalen works with seasonal ingredients and cooks everything from scratch.
