In the World Heritage Visitor Centre, you’ll find Matsalen \u2013 a place for food, meetings, and communication with a view over the world heritage site.<\/p>\n
The kitchen at Matsalen is open on Saturdays<\/strong> as well as for pre-booked groups and special events<\/strong>. In line with the world heritage site’s mission to lead the way toward a more sustainable future, the kitchen primarily works with ingredients that have a lower climate impact, such as fish, poultry, and plant-based alternatives. <\/p>\n \u2018In-between\u2019 is not a compromise but a conscious strategy. Today, it mainly features vegetarian dishes but also serves as a flexible zone for thoughtful choices, such as local game meat with a low climate impact. The important thing isn’t following absolute rules, but that every ingredient is a conscious and responsible choice. <\/p>\n Red meat has therefore not been part of the regular menu so far. This isn’t for dogmatic reasons, but to reduce the carbon footprint while showing that sustainable gastronomy can be both generous and flavorful. <\/p>\n Matsalen works with seasonal ingredients and cooks everything from scratch.
